An 11th century knight was like, the big strong guy in the village who sometimes gets his buddies together and kills a boar to share with everyone, and occasionally a big warlord will call him up to raid those assholes on the other side of the forest (or to protect everyone from being raided by the assholes on the other side of the forest).
A 15th century knight was a hereditary nobleman who did politics and probably paid cash in lieu of direct military service.
